Yes, that's right, my new title is... Domestic Diva! Though admittedly, I have to give most of the credit to my husband, who should have a title like- "Daring Domestic Dude" or something close to that.
Over the last few weeks, with some good prices on meat and fruits and vegetables (some free), we managed to fill up both our freezers. We were able to make and prepare several meals, sides and desserts including: 3 meatloaves, 2 packs of hamburgers, 3 bags of taco meat, 4 bags of meatballs, 1 large turkey (purchased at Thanksgiving for a steal)cooked and bagged (x4), 3 bags of roasted rice, raspberries, bananas, muffins, 1 peach pie, and over 14 quart size bags of sweet corn (6 dozen).
Thanks to my sister-in-law, her parents garden and orchard, we got lots of peaches, green peppers, hot peppers, rhubarb, zucchini, and tomatoes. With the zucchini we were able to make zucchini bread, freeze shredded zucchini, and use the dehydrator for sliced zucchini (to use in vegetable lasagna later), and my husband is hoping to make zucchini pancakes this week. The tomatoes became salsa, and sliced dried tomatoes (like sun dried tomatoes, in recipes). We also made a rhubarb cake this past weekend to share with friends.
We are looking forward to the Fall harvest when we will buy apples and make applesauce and dried apple rings.
