Yes, that's right, my new title is... Domestic Diva! Though admittedly, I have to give most of the credit to my husband, who should have a title like- "Daring Domestic Dude" or something close to that.
Over the last few weeks, with some good prices on meat and fruits and vegetables (some free), we managed to fill up both our freezers. We were able to make and prepare several meals, sides and desserts including: 3 meatloaves, 2 packs of hamburgers, 3 bags of taco meat, 4 bags of meatballs, 1 large turkey (purchased at Thanksgiving for a steal)cooked and bagged (x4), 3 bags of roasted rice, raspberries, bananas, muffins, 1 peach pie, and over 14 quart size bags of sweet corn (6 dozen).
Thanks to my sister-in-law, her parents garden and orchard, we got lots of peaches, green peppers, hot peppers, rhubarb, zucchini, and tomatoes. With the zucchini we were able to make zucchini bread, freeze shredded zucchini, and use the dehydrator for sliced zucchini (to use in vegetable lasagna later), and my husband is hoping to make zucchini pancakes this week. The tomatoes became salsa, and sliced dried tomatoes (like sun dried tomatoes, in recipes). We also made a rhubarb cake this past weekend to share with friends.
We are looking forward to the Fall harvest when we will buy apples and make applesauce and dried apple rings.

It's just a phase... this is what I tell my self everyday. Raising 3 little ones, is interesting to say the least. I have yet to figure out my true purpose of this blog... an outlet, to share the joys of parenting, or to just talk to myself? Hopefully I will figure this out!?!

My middle child... 3 gray hairs just today!
Our middle child is 3, need I say more? The answer is yes!
"E" is always up to something new and "interesting". Today alone he managed to get in enough trouble after finding some paints. He wanted to paint a picture (and the floor), later he opened his water bottle during nap time and got his entire bed wet, took the mattress off, all the sheets, blankets, mattress cover, and pillow off the bed and proceeded to stack everything, including his beanbag chair. This is when I walked in... ER visit averted!
He is also being potty trained... for 2 months now... some days he does a perfect job (as long as it only involves going #1), and then there are days like yesterday. Yesterday we were home all day so we put him in underwear and his clothes and we (well my husband) changed him 5 times.
We have been patient with him, rewarded, bribed, done stickers, gifts, candy, underwear, underwear with plastic pants, pull-ups, used a training potty, used the "big boy potty". He really DOESN'T CARE. If preschool wasn't around the corner I wouldn't be so determined, but he MUST go to preschool (for his sake).
Sorry for the ranting, this potty training thing is driving me crazy. Our first son was trained in a week, through the night! I'm not comparing them, well maybe a little.

Recipe: Chicken Azteca
This slow cooker recipe is from my sister-in-law Kim.
2 cups frozen corn
15 oz can black beans, rinsed and drained
1 cup chunky salsa
1 clove garlic, minced
1/2 tsp ground cumin
3 boneless skinless chicken breasts, 1 pd
8 oz cream cheese, cubed
Toppings:
tortillas
lettuce
salsa
cheese
green chillies
1. Combine corn, beans, and 1/2 cup salsa in slow cooker. Arrange chicken breasts over top; pour remaining 1/2 cup salsa over chicken. Cover, cook on high 2-3 hours or low 4-6 hours till chicken is tender.
2. Remove chicken; cut into small pieces. Return chicken to slow cooker, add cream cheese. Cook on high until cream cheese melts and blends into sauce. Spoon chicken sauce into tortillas. Top with cheddar cheese.
Recipe can be doubled if you have a large cooker. This can be frozen to if you freeze it before adding the cream cheese.
Enjoy!
